01 — Slow Fire
Jerk is fire cooking.
It all comes down to that signature jerk BBQ sauce. Bone-in chicken thighs and jumbo shrimp go on over open heat, brushed in that sauce, then left alone long enough for smoke to do its work.
The oxtail is the patient one — slow-braised in a rich dark glaze until it's deep, smoky and falling off the bone. Yellow seasoned rice, sweet corn, caramelized plantains. This is real food from a real trailer, plated in the container it belongs in.
